Ingredients
2 Whole chicken breasts, halved and boned
3 Eggs, beaten
1 cup Bread crumbs ( use Italian flavoured bread crumbs or add your own spices)
3 tbsp Parmesan cheese, grated
1 14 oz. Can tomato sauce
1/2 cup Mozzarella cheese, grated
1/4 cup Parmesan cheese, grated

Preparation
Mix bread crumbs and 3 tablespoons Parmesan cheese together.
Dip chicken pieces in eggs, then in crumb mixture. Fry until golden brown.
Put pieces in baking dish and spread tomato sauce over all.
Sprinkle with mozzarella and Parmesan cheeses.
Bake at 350 for 1 hour, serves 4.
