Simply Super Tomato Sauce

It is the time of year for hearty meals and my favorite is homemade pasta with homemade pasta sauce. After trying several pasta recipes I found a blog that has an outstanding recipe with excellent directions. I make bucatini instead of the flat pasta because I like the body of a fat pasta. This recipe started out from the my favorite cookbook series best of bridge but with a few addition and changes it has become my stand by for all of my Italian tomato dishes.

2 Tbsp Olive Oil
2 cloves garlic, slightly crushed
pinch of hot pepper flakes
1 small onion, finely chopped
1 28 oz can of crushed tomatoes
1 18 oz can of chunky stewed tomatoes with Italian seasoning
1 tbsp sugar
salt and fresh ground pepper
1/4 cup shredded fresh basil
1 rind of Parmesan cheese ( don't leave this out, it really adds wonderful flavor)

Heat oil over medium heat, saute garlic and hot pepper flakes until garlic is golden brown then remove the garlic and discard. Add the onions and saute until softened. Add tomatoes and sugar, bring to a boil then reduce heat and add Parmesan rind, simmer for at least 1 hour or until your pasta has been prepared. Season to taste with salt and pepper . Stir in basil
