Lunch box muffins!! Best of Bridge



These are great to make for lunches, picnics or brunch. They have substance so they will hold you over and it is a great recipe for using up left over ham.

1 1/2 cups broccoli, finely chopped                            
1 1/2 cups chopped cooked ham
1 medium onion, chopped
1/2 cups grated Parmesan cheese
6 eggs
1 1/4 cups flour
1/2 cup vegetable oil
1 tbsp baking powder
1 tsp oregano
1 tsp parsley
1/4 tsp thyme
1/2 tsp garlic powder

Preheat oven to 375. Cook broccoli until tender crisp. In a large bowl, combine broccoli, ham, onion and cheese. In another bowl beat eggs until foamy; blend in oil. Add dry ingredients; beat until smooth. Stir in broccoli mixture until just blended. Spoon into greased muffin tins. Bake 20 - 25 mins or until lightly brown. May be served warm or cold . Make 12 muffins
