Pasta with Tomato Salsa, Spinach and Feta

This is a quick dinner that easy to make and easier to enjoy. It calls for Fresh tomatoes but I have found using canned tomatoes gave the same taste. Gluten free pasta can be used - be sure not to over cook and look for one from Italy.

1 can of diced tomatoes
1/4 cup fresh Parmesan cheese                                        
2 cups torn  fresh spinach
1 garlic clove, minced
1/3 cup olive oil
1/2 cup chopped fresh basil
pepper to taste

Combine in a bowl( it is your choice if you want to heat the tomato mixture or keep it at room temp)

1 lb penne or another of your choice
1/2 cup feta cheese
3 tbsp pine nuts, toasted
2 tbsp chopped fresh parsley

Cook penne in boiling salted water until tender. Drain and toss with tomato mixture. Top with feta and pine nuts. Sprinkle with parsley. Serves 6
