Easy and delicious Guacamole

There is nothing like a good guacamole! I wrote this recipe down after having it prepared for me, at table side, in a Mexican restaurant. It will keep it`s bright green colour thanks to the fresh lime and it doubles (or triples) easily. Start by picking a Ripe Avocado, it should be dark black/brown and soft to the touch. You can almost make an indent when pushing the skin with your finger. Use a fresh lime and fresh cilantro - that will make the difference!

1 Avocado (supermarkets will often put a 'Ripe' sticker on the avocado)
juice from 1/2 of 1 lime
1 1/2 tablespoons fresh cilantro, chopped
2 tablespoons tomato, diced
2 tablespoons onion, diced
salt and pepper to taste

Cut the avocado in half and remove the pit, scoop the flesh out and place in a small bowl. Roll the lime, using the palm of your hand on the counter, this helps release the juices. Cut the lime in half and squeeze the juice from one half of the lime into the bowl containing the avocado. Using a potato masher, mash the avocado and juice together until it reaches desired consistency.( I like mine chunky) Add the chopped cilantro, tomatoes and onion. Give a generous shake of salt and pepper. Stir until well combined. Delicious served with tortilla chips, in a burrito or quesadilla . With the half of lime you have left, pop open a Corona and put a slice of lime in it - waste not, want not :)
