3 pepper pasta salad allrecipes - yummy!!

I love a good pasta salad! One that is not loaded with dressing and has fresh ingredients. 3 pepper pasta salad is just that. Remember, the choice of pasta, veggies and cheese is up to you. Just keep the dressing the same and use fresh basil!

Original recipe makes 8 servingsChange Servings

  1. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  2. In a blender or food processor, blend the olive oil, white wine vinegar, basil, Parmesan cheese, salt, and pepper until smooth.( I always put the dressing together before I cook the pasta)
  3. In a large bowl, toss together the cooked pasta, red bell pepper, yellow bell pepper, orange bell pepper, tomato, and olives. Top with mozzarella cheese to serve. Do not dress the salad until just before eating * double the dressing if you like*
