1 1/2 cups fresh baby shrimp, cooked
1 Tbsp horseradish
2 tsp capers with some juice
salt and pepper
1 cup Whipping cream, whipped
10 strips smoked salmon ( 3" x 5" paper thin lox)
Lettuce leaves and lemon slices for garnish
Fold shrimp, horseradish, capers, salt and pepper into whipped cream. Place 1 heaping tbsp of mixture on each strip of salmon and roll up. ( no tooth picks needed) Cut in half and arrange on lettuce leaves, place some cut up lemon on platter as well.
